Cotton yarn is more firm than acrylic yarn, this might make your stalk sturdier. Also, crocheting tightly makes it more firm. If that doesn't work, you can insert a pipe cleaner or small piece of metal wire from the stalk into the flower, and add a bit of fiberfill around it.
